Easter Nests With Mini Eggs

Easter Nests

Perhaps the easiest treat to make this Easter weekend. You’ll be done and cleaned up in less than 10 mins. This recipe has been in the family for years and I remember it most from visiting my aunt’s farm at the Easter holidays and hoping there would be some of these treats on the table at teatime. If you wanted to make these a little healthier, you can swap out the cereal for a higher fibre option like bran flakes or All Bran.

Instructions

  • Put the butter, cocoa, syrup and sugar in a large saucepan (this will also become your mixing bowl).
  • Melt the ingredients until the sugar crystals have disappeared but don’t boil the mixture.
  • Remove from the heat and add the breakfast cereal spoon by spoon stirring gently to coat.
  • Spoon into paper cases. You should end up with about 11 generous or 12 slightly smaller nests.
  • Top with one or two mini eggs in the centre and allow to fully cool before serving.
