Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper.
In a large bowl, toss the halved baby potatoes with olive oil, thyme, salt, and pepper. Spread them evenly on the prepared baking tray.
Nestle the garlic cloves among the potatoes and bake for 25 minutes.
After 25 minutes, add the chunks of feta to the tray, arranging them among the potatoes. Continue baking for another 15-20 minutes until the potatoes are golden and the feta is lightly browned.
Once out of the oven, squeeze the roasted garlic out of its skins and mix it gently with the potatoes. Drizzle with a little extra olive oil, squeeze of lemon juice, and sprinkle with fresh parsley.
Serve immediately, and enjoy the perfect balance of crispy potatoes, creamy feta, and sweet roasted garlic.
