  • Put the garlic, ginger, oil, and ½ teaspoon of flaked sea salt into a small sauté pan. Place it on a medium to low heat and cook gently for 25 minutes, swirling the pan occasionally until the solids are lightly golden. Strain the oil through a sieve and set aside to cool for at least 10 minutes. Transfer the ginger and the garlic to a plate lined with kitchen towel to crisp up further.
  • Use a fork to whisk the lime zest, lime juice, fish sauce, and coriander into the cooled ginger and garlic-infused olive oil until combined.
  • Gently toss all the tomatoes together with 1 teaspoon of sea salt and a generous grind of pepper. Arrange the tomatoes and the red onion on a platter and spoon over the dressing. Finish it off by scattering the crispy ginger and garlic over the tomatoes. Serve the salad right away!
