Place it on a medium to low heat and cook gently for 25 minutes, swirling the pan occasionally until the solids are lightly golden. Strain the oil through a sieve and set aside to cool for at least 10 minutes. Transfer the ginger and the garlic to a plate lined with kitchen towel to crisp up further.
Use a fork to whisk the lime zest, lime juice, fish sauce, and coriander into the cooled ginger and garlic-infused olive oil until combined.
