Instructions
Crisp the Fries: Preheat your oven to 220°C (fan 200°C). Toss the fries with olive oil, salt, and pepper, and spread them evenly on a baking tray. Bake for 20–25 minutes until golden and crisp, tossing halfway through.
Prepare the Tex-Mex Topping: In a large pan over medium heat, add a drizzle of olive oil and sauté the chopped onion and red bell pepper until soft (about 3–4 minutes). Add the garlic and cook for another minute. Stir in the ground beef (or black beans), chili powder, cumin, smoked paprika, salt, and pepper. Cook until the beef is browned and fully cooked, about 6–8 minutes. Drain any excess fat if needed.
Assemble the Dish: Arrange the crispy fries on a serving platter. Spoon the Tex-Mex topping evenly over the fries, then drizzle generously with nacho cheese sauce. Top with pico de gallo, sliced jalapeños, and finish with a dollop of sour cream and a sprinkle of chopped coriander.
