Ingredients
For the skewers
250gHalloumi Cheesecut into 2.5cm cubes
200gpineapplefresh, cut into chunks
1red peppercut into 2.5cm squares
1Red Onioncut into chunks
3tbspsweet chilli sauce
1tbsphoneyrunny
1limezested and juiced
1tspsoy sauceoptional, for extra umami
Instructions
In a small bowl, mix the sweet chilli sauce, honey, lime zest, lime juice, and soy sauce.
Thread halloumi, pineapple, red pepper, and red onion onto skewers, alternating ingredients for a colourful finish.
Brush generously with the glaze.
Preheat BBQ or grill to medium-high. Grill skewers for 8–10 minutes, turning regularly and basting with more glaze, until the halloumi is golden and the pineapple begins to caramelise.
Serve immediately, garnished with fresh coriander or extra lime wedges if desired.
