Puff Pastry Bites with Feta, Spinach and Pine Nuts

Flaky puff pastry encloses a savoury filling of feta, spinach, and pine nuts. These golden appetisers are easy to prepare, satisfy vegetarians, and deliver a hearty, nutty bite perfect for gatherings, parties, or family snacking.
Preheat the oven to 200°C (fan 180°C). Line a tray with parchment.
Unroll the puff pastry and cut into 16 squares. Wilt the spinach in a pan with a tiny knob of butter, then squeeze out excess liquid and chop finely.
Mix spinach with crumbled feta, toasted pine nuts, nutmeg, salt, and pepper. Place a spoonful of filling in the centre of each pastry square. Fold the corners towards the centre, leaving a little gap for steam to escape. Brush with beaten egg.
Bake for 15–18 minutes until golden brown and crisp. Serve warm or at room temperature

Feta can vary in sharpness depending on the brand. Choose one with a creamy texture that crumbles easily, it will melt slightly into the spinach without turning watery.Toast the pine nuts in a dry pan until golden. Their flavour intensifies quickly, so keep a close eye — they go from perfect to burnt in seconds.
