For the fries

300gsteaksirloin or ribeye
2tbspsoy sauce
1tbspsesame oil
1tbspsugarbrown

For the toppings
100gkimchiroughly chopped

Instructions
Cook the fries
Preheat the oven to 220°C (fan 200°C). Toss fries with vegetable oil, salt, and pepper. Spread evenly on a baking tray and bake for 20–25 minutes until golden and crispy, turning halfway through.
Marinate the beef
In a bowl, combine soy sauce, sesame oil, brown sugar, garlic, ginger, spring onion, rice vinegar, and gochujang (if using). Add the beef, mix well to coat, and marinate for at least 20 minutes (or up to 1 hour for deeper flavour).
Cook the beef
Heat a large pan or skillet over high heat. Add the marinated beef and cook in batches if necessary, searing for 1–2 minutes on each side until caramelised and just cooked through.
Assemble the loader fries
Place the hot fries on a large platter or dish. Top with the sizzling Korean BBQ beef, then scatter over the chopped kimchi. Drizzle with mayo and garnish with sesame seeds, spring onions, and fresh coriander if using.
Serve immediately
