Instructions
Preheat your grill or barbecue to medium-high heat (200°C [400°F]).
In a large bowl, combine the bell peppers, courgette, red onion, and cherry tomatoes. Drizzle with extra virgin olive oil and lemon juice. Sprinkle dried oregano, salt, and black pepper over the vegetables, then toss gently to ensure even seasoning.
Place the vegetables in a single layer on a grilling tray or directly on the grill. Cook for 15–20 minutes, turning occasionally, until the vegetables are tender and have developed slight char marks.
Remove the vegetables from the grill and transfer to a serving dish.
Sprinkle the crumbled feta evenly over the warm vegetables, allowing the heat to soften the cheese slightly. Garnish with fresh basil or parsley.
