Instructions
Rinse the rice under cold water until the water runs clear. This removes excess starch and ensures fluffy rice.
Heat the olive oil in a saucepan over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant.
Stir in the rinsed rice and toast for about a minute to enhance its nutty flavour.
Pour in the chicken or vegetable stock, lemon juice, and lemon zest. Add salt, black pepper, oregano, and dill.
Bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes or until the rice is tender and has absorbed the liquid.
Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, then stir in the fresh parsley and mint (if using).
