Bringing the fresh, vibrant flavours of the Greek islands straight to your grill, these Greek Lemon & Oregano Halloumi Skewers are a true Mediterranean delight.
In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, thyme (if using), black pepper, and a generous pinch of salt.
Marinate the Ingredients
Add the halloumi cubes, cherry tomatoes, red onion wedges, and courgette ribbons to the bowl. Toss gently but thoroughly to ensure all the ingredients are evenly coated. Marinate for 15–30 minutes.
Assemble the Skewers
Thread the marinated halloumi, tomatoes, onion, and courgette onto skewers, alternating for a colourful mix.
Preheat and Grill
Heat your barbecue or grill pan to medium-high. Lightly oil the grates. Grill the skewers for about 8–10 minutes, turning occasionally until the halloumi is golden and vegetables are slightly charred.
Garnish and Serve
Transfer the skewers to a serving platter. Drizzle with extra lemon juice, sprinkle with fresh oregano, and serve hot.
