For the Chicken Souvlaki Skewers
900gchicken thighsboneless, cut into 4 cm pieces
60mlolive oilextra virgin
1lemonjuice and zest
4clovesgarlicminced

For the Tzatziki Sauce
500ggreek yoghurt
1cucumberpeeled and grated
2clovesgarlicminced
1tbspolive oilextra virgin

1tbspdillfresh, chopped

Instructions
Prepare the Marinade: In a large bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
Marinate the Chicken: Add the chicken pieces to the bowl and toss until they are evenly coated. Cover with cling film and refrigerate for at least two hours, preferably overnight.
Make the Tzatziki Sauce: While the chicken is marinating, prepare the Tzatziki sauce. Squeeze out excess water from the grated cucumber using a clean towel or paper towels. In a bowl, mix the Greek yogurt with the grated cucumber, minced garlic, olive oil, lemon juice, chopped dill, salt, and pepper. Refrigerate until ready to serve.
Preheat the Grill: Heat your grill to 200°C (400°F) and lightly oil the grates.
Skewer the Chicken: Thread the marinated chicken onto the skewers.
Grill the Chicken Skewers: Place the skewers on the preheated grill and cook for 10-12 minutes, turning every few minutes until the chicken is evenly charred and cooked through (internal temperature should reach 75°C/165°F).
Rest and Serve: Remove the skewers from the grill and let them rest for about 5 minutes. Serve with a generous serving of Tzatziki sauce and your favorite sides.
