Flaky Puff Pastry Bites with Caramelised Onion Chutney
Crisp puff pastry is baked around sweet caramelised onion chutney, producing bite-sized appetisers that balance savoury depth with golden crunch. Easy to prepare and perfect for parties, snacks, or cheese boards, they’re guaranteed to disappear quickly.
Ingredients
- 1 Sheet ready-rolled puff pastry 320g
- 150 g Caramelised onion chutney
- 1 Egg beaten (for glazing)
- 50 g Cheddar cheese mature, grated
- 1 tsp Fresh thyme leaves
Instructions
- Preheat the oven to 200°C (fan 180°C). Line a baking tray with parchment.
- Unroll the puff pastry and cut into 16 equal squares. Place them evenly spaced on the tray. With a sharp knife, lightly score a 1cm border inside each square, being careful not to cut all the way through.
- Spoon about a teaspoon of caramelised onion chutney into the centre of each square. Sprinkle with grated cheddar and a few thyme leaves. Brush the borders with beaten egg.
- Bake for 15–18 minutes until the pastry is puffed and golden, and the cheese is bubbling. Leave to cool slightly before serving.
Notes
If you don’t have ready-made chutney, slowly cook two large onions in a knob of butter with a splash of balsamic vinegar until sticky and jammy. It won’t be as quick as opening a jar, but it will fill your kitchen with a smell that makes the wait worth it.
Cheddar gives the bites a salty kick to balance the sweet chutney. A strong, mature cheese works best here, though Gruyère or Comté make elegant substitutes if you’re feeling fancy.
