salmon creamy asparagus broccoli peas

Ingredients :

  • 2 tbsp olive oil
  • 2 salmon fillets
  • pack of asparagus spears (approx 20 skinny spears)
  • 6 tenderstem broccoli
  • 1 garlic clove, crushed
  • 150ml vegetable stock
  • 125g frozen peas
  • 100g creme fraiche
  • 1tsp dill
  • 1tbsp fresh chopped parsley


  1. Heat 1 tbsp oil in a small frying pan; add the asparagus spears and broccoli stems and fry off for 3 minutes.
  2. Pour in the vegetable stock and cook for a further 5 minutes until tender. Add the peas, herbs and creme fraiche and turn down the heat.
  3. Heat 1 tbsp oil in another small frying pan; season the salmon with salt and pepper the cook the salmon skin side down until you see the fish cooked through to half way. Turn over the fish and cook through.
  4. Serve the asparagus and broccoli into two wide bowls or plates. Top with the salmon then spoon over the peas and cream, dividing between the two.
