Very easy to make but delicious lunch dish, the hollandaise sauce is easy to make and the added cayenne pepper makes it nice and punchy.
Ingredients
For the hollandaise sauce
- 2 egg yolks
- 1/4 lemon, juiced
- Pinch of salt
- Pinch of cayenne pepper
- 55 grams of melted butter
Other ingredients
- 4 large eggs
- 2 English breakfast muffins
- 4 slices of ham
Directions
- Beat egg yolks, lemon juice, salt and cayenne pepper together in a microwave-safe bowl until smooth. Slowly stream melted butter into the egg yolk mixture while whisking to incorporate.
- Heat in microwave for 15 to 20 seconds; whisk. If sauce separates after microwaving, add a splash of water and whisk until combined.
- Slice the muffins in half and toast them
- poach all 4 eggs
- Put the slices of ham on the muffins, top them with the poached eggs and pour over the hollandaise sauce.
